Can I keep using Sage 50 while the conversion to QuickBooks is running?

Yes, you can keep working in Sage 50 while we convert your data, as long as the file we convert is a copy taken at a fixed freeze date. What you should not do is keep entering transactions in Sage after that date and expect them to appear in QuickBooks automatically. The conversion captures one snapshot, not a live feed.
How the freeze date works
We agree on a cutoff with you before anything starts. Typically it is a month end, quarter end, or another clean boundary in your books. We then take a copy of the Sage data as of that date and run the conversion against the copy.
Your live Sage file stays untouched and usable. You can keep invoicing, paying bills, and running payroll in Sage right up to the day you switch. The tradeoff is simple: anything entered after the freeze date will not be in the converted file.
What happens to transactions entered after the freeze date?
You have two options, and both are normal practice.
The first is to stop entering new transactions in Sage on the freeze date and hold paper activity for a few days. When the QuickBooks file is ready, you enter those held transactions directly in QuickBooks. This keeps a single set of books and is the cleanest path.
The second is to keep working in Sage for a short overlap period, then bring the post-freeze transactions over as a second pass. This works best when the overlap is short and the volume is small. The longer the overlap, the more manual re-entry or a second conversion pass you will need.
Cutover best practice
Plan the switch for a quiet period if you can. A month end works well because reconciliations are current and the opening balances in QuickBooks tie out cleanly.
Before you go live in QuickBooks, verify the trial balance, receivables and payables aging, and inventory values against the final Sage reports as of the freeze date. Do not enter anything new in QuickBooks until those numbers agree. Once they do, make the switch permanent: Sage becomes read-only reference, and all new activity happens in QuickBooks only.
Running both systems in parallel for weeks is the one pattern to avoid. It doubles the work and the two sets of books drift apart quickly. A short, deliberate cutover is far safer than a long overlap.
