How does a lists-only conversion work?
Our engineers read the Sage 50 data, extract the name records, and import them into the matching QuickBooks lists. Invoices, bills, payments, and journal history do not move, because they are outside the scope you set.

Why do some firms start fresh?
Skipping history is usually a deliberate decision, not a compromise. Years of cleared transactions make the new file larger and slower for no day-to-day benefit. A clean cutover at fiscal year end also gives you a chance to retire an old chart of accounts or drop names you no longer trade with.
Your Sage file stays where it is as a read-only archive. When someone needs to check an old payment, they open the archive. The new books carry only what is still live.
Where do the opening balances come from?
With no history converting, QuickBooks starts empty, so balances have to be brought in as of a cutover date. The source is your final Sage reporting: aged receivables for each customer, aged payables for each vendor, and a trial balance for everything else.
There are two usual approaches. One is to enter each open invoice and unpaid bill, so future payments apply against real documents. The other is a single summary balance per name, which is faster but gives up per-document reporting. Which suits you depends on volume and on how much detail you need at the name level. Either way, the totals must tie back to the trial balance as of the cutover date.
